Enjoy our gluten-free almond flour waffles with a tangy, sugar-free raspberry sauce for a healthy, delicious breakfast. Made with organic ingredients, these waffles make mornings delightful.
Ingredients (organic/biodynamic)
For the Raspberry Sauce:
- 2 c. fresh or frozen raspberries
- 1/4 c. water
- 1 tsp. lime juice
- 1 tsp. vanilla extract
For the Waffles:
- 1 1/2 c. almond flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 tsp. vanilla extract
- 9quail eggs (or 2 duck eggs)
- 1/4 c. unsweetened almond milk (or any other non-dairy milk of your choice)
Instructions
- In a medium saucepan, combine the raspberries and ¼ c. water.
- Bring to a simmer over medium heat, stirring occasionally, until the raspberries start to break down and release their juices, about 5-7 minutes.
- Add the lime juice and vanilla extract to the saucepan and stir well.
- (Optional) Strain the mixture through a fine-mesh sieve into a bowl, pressing down on the solids to extract as much liquid as possible if you prefer a smoother sauce without seeds.
- Allow the sauce to cool slightly.
- Preheat your waffle iron according to its instructions.
- In a large mixing bowl, whisk together the almond flour, baking powder, and salt until well combined.
- In a separate bowl, beat the eggs and vanilla extract until frothy.
- Pour the egg mixture into the almond flour mixture and stir until just combined.
- Gradually add the almond milk, stirring until the batter reaches a smooth consistency. The batter should be thick but pourable.
- Pour enough batter onto the center of the preheated waffle iron to cover about 2/3 to 3/4 of the surface area (the amount will depend on the size of your waffle iron).
- Close the lid and cook according to the manufacturer’s instructions, usually for about 3-5 minutes or until the waffles are golden brown and crispy.
- Carefully remove the waffles from the iron and transfer them to a plate. Repeat with the remaining batter.
- Serve the waffles warm with the prepared raspberry sauce drizzled on top.
- Optionally, add your favorite toppings such as fresh berries, sliced bananas, nuts or coconut flakes!
