Cauliflower & Lentil Curry

Serves 4-6

This nourishing curry brings together fiber-rich lentils, cruciferous cauliflower, and antioxidant-packed turmeric for a meal that supports digestion, immune function, and overall well-being. Lentils provide plant-based protein and essential minerals like iron and magnesium, while cauliflower offers sulforaphane, a compound recognized for its detoxifying properties. Garlic and ginger contribute potent anti-inflammatory benefits, and coconut milk adds healthy fats that aid in nutrient absorption. With warming spices and a hearty texture, this dish is both satisfying and deeply nourishing.

Ingredients (organic/biodynamic)

  • 1 small head of cauliflower, cut into florets
  • 1 c. dried lentils, rinsed
  • 1 red onion, chopped
  • 2 garlic cloves, minced
  • 1 Tbsp. ginger, grated
  • 1 Tbsp. curry powder
  • ½ turmeric
  • 5-6 tomatoes, chopped
  • 2 c. vegetable broth
  • 1 can coconut milk
  • Celtic Sea Salt® and fresh pepper to taste
  • Fresh cilantro for garnish

Instructions:

  1.  In a large pot, add a splash of water and sauté the onion, garlic, and ginger over medium heat until they soften.
  2. Add curry powder and turmeric and cook for 1-2 minutes until fragrant.
  3. Stir in the cauliflower, lentils, diced tomatoes, vegetable broth, and coconut milk.
  4. Simmer for 30-40 minutes, until the lentils and cauliflower are tender.
  5. Garnish with fresh cilantro and serve.
