This nourishing curry brings together fiber-rich lentils, cruciferous cauliflower, and antioxidant-packed turmeric for a meal that supports digestion, immune function, and overall well-being. Lentils provide plant-based protein and essential minerals like iron and magnesium, while cauliflower offers sulforaphane, a compound recognized for its detoxifying properties. Ingredients (organic/biodynamic)
- 1 small head of cauliflower, cut into florets
- 1 c. dried lentils, rinsed
- 1 red onion, chopped
- 2 garlic cloves, minced
- 1 Tbsp. ginger, grated
- 1 Tbsp. curry powder
- ½ turmeric
- 5-6 tomatoes, chopped
- 2 c. vegetable broth
- 1 can coconut milk
- Celtic Sea Salt® and fresh pepper to taste
- Fresh cilantro for garnish
Instructions:
- In a large pot, add a splash of water and sauté the onion, garlic, and ginger over medium heat until they soften.
- Add curry powder and turmeric and cook for 1-2 minutes until fragrant.
- Stir in the cauliflower, lentils, diced tomatoes, vegetable broth, and coconut milk.
- Simmer for 30-40 minutes, until the lentils and cauliflower are tender.
- Garnish with fresh cilantro and serve.
