Chickpea Spinach Patties

Serves: 3-4

Fuel your day with these Chickpea Spinach Patties—tasty, plant-protein-packed bites made with simple, nutrient-dense ingredients. Perfect for snacking, salads, or a light, wholesome meal!

Ingredients (organic/biodynamic)

  • ½ c. organic dried chickpeas
  • 1 c. fresh spinach, chopped
  • ¼ c ground flaxseed
  • 4-8 cloves of garlic, minced (Depends on the size of your garlic cloves; if small you can use more; if large, use less).
  • 1 tsp. cumin
  • ½ tsp. paprika
  • ½ tsp. Celtic Sea Salt®
  • ¼ tsp. freshly ground black pepper
  • 2-3 Tbsp. coconut flour
  • 2-3 Tbsp. water (adjust as needed) 


    Instructions:

  1. Soak chickpeas overnight in plenty of water overnight, then rinse thoroughly.
  2. Drain the soaking water and transfer the chickpeas to a pot with fresh water. Add a pinch of Celtic Sea Salt if desired.
  3. Simmer chickpeas for 1-2 hours until tender. Drain, and let cool to room temperature.
  4. In a large bowl, mash the chickpeas until smooth, leaving some chunks for texture.
  5. Add chopped spinach, ground flaxseed, garlic, cumin, paprika, sea salt, and black pepper. Stir to combine.
  6.  Add 2 Tbsp. coconut flour to start. Coconut flour absorbs a lot of liquid, so add more water (1 Tbsp. at a time) until the mixture comes together. You may need to use 3 Tbsp. or more water.
  7. Shape the mixture into small patties.
  8. Heat a non-stick pan over medium heat. Cook the patties for 4-5 minutes on each side, or until golden brown and firm.
  9. Enjoy as a snack or alongside salads or veggies.
