Fuel your day with these Chickpea Spinach Patties—tasty, plant-protein-packed bites made with simple, nutrient-dense ingredients. Perfect for snacking, salads, or a light, wholesome meal!
Ingredients (organic/biodynamic)
- ½ c. organic dried chickpeas
- 1 c. fresh spinach, chopped
- ¼ c ground flaxseed
- 4-8 cloves of garlic, minced (Depends on the size of your garlic cloves; if small you can use more; if large, use less).
- 1 tsp. cumin
- ½ tsp. paprika
- ½ tsp. Celtic Sea Salt®
- ¼ tsp. freshly ground black pepper
- 2-3 Tbsp. coconut flour
- 2-3 Tbsp. water (adjust as needed)
Instructions:
- Soak chickpeas overnight in plenty of water overnight, then rinse thoroughly.
- Drain the soaking water and transfer the chickpeas to a pot with fresh water. Add a pinch of Celtic Sea Salt if desired.
- Simmer chickpeas for 1-2 hours until tender. Drain, and let cool to room temperature.
- In a large bowl, mash the chickpeas until smooth, leaving some chunks for texture.
- Add chopped spinach, ground flaxseed, garlic, cumin, paprika, sea salt, and black pepper. Stir to combine.
- Add 2 Tbsp. coconut flour to start. Coconut flour absorbs a lot of liquid, so add more water (1 Tbsp. at a time) until the mixture comes together. You may need to use 3 Tbsp. or more water.
- Shape the mixture into small patties.
- Heat a non-stick pan over medium heat. Cook the patties for 4-5 minutes on each side, or until golden brown and firm.
- Enjoy as a snack or alongside salads or veggies.
