Cooling Cucumber Avocado Soup

This refreshing summer soup brings together the coolness of cucumbers and the smoothness of avocado for a light yet satisfying dish. Fresh lime juice adds a subtle brightness, while cilantro contributes a clean, fresh taste. Free from gluten, soy, dairy, and nuts, this soup is easy to make and fits well with various dietary preferences. Serve it chilled to enjoy its crisp and refreshing taste.

Ingredients (organic/biodynamic)

  • 2 large cucumbers, peeled and chopped
  • 2 ripe avocados, peeled and pitted
  • 2 Tbsp. fresh lime juice
  • 1/4 c. fresh cilantro leaves (plus extra for garnish)
  • Celtic Sea Salt®, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. In a blender or food processor, combine the cucumbers, avocados, lime juice, and cilantro.
  2. Taste the soup and add Celtic Sea Salt® and freshly ground black pepper to your liking.
  3. Transfer the soup to a bowl or pitcher and chill in the refrigerator for at least one hour to let the flavors meld.
  4. Stir the soup before serving.
  5. Garnish with additional cilantro leaves if desired.
  6. Enjoy!
