Deviled Duck Eggs

Serves 6

 These deviled duck eggs are a creamy twist on the classic, made with coconut yogurt, mustard seeds, smoked paprika, and a splash of lime juice. Garnished with fresh chives and extra paprika, they’re a deliciously wholesome bite for any occasion.

Ingredients (organic/biodynamic)

  • 6 duck eggs
  • 2 Tbsp. unsweetened coconut yogurt
  • 1 tsp. ground mustard seeds
  • 1/2 tsp. garlic powder
  • 1/4 tsp. smoked paprika (plus extra for garnish)
  • 1 tsp. lime juice
  • Celtic Sea Salt® and fresh pepper to taste
  • Chopped fresh chives (for garnish)

    Instructions:

  1. Place eggs in a pot and cover with water. Bring to a boil, then reduce heat and simmer for 10-12 minutes. Transfer eggs to an ice bath and let them cool for at least 10 minutes before peeling.
  2. Cut the eggs in half and scoop out the yolks into a bowl. Mash yolks with a fork, then mix in coconut yogurt, ground mustard seeds, garlic powder, smoked paprika, lime juice, Celtic Sea Salt®, and pepper.
  3. Spoon or pipe the filling back into the egg whites.
  4. Sprinkle with extra smoked paprika and chopped chives. Serve immediately or chill for a few hours for the flavors to meld.
