Start your day the right way—with a nutritious and delicious breakfast that’s as satisfying as it is wholesome. Our Greek Breakfast Scramble, featuring duck eggs, brings together the finest organic ingredients to create a light, refreshing, and flavorful dish inspired by the sunny coasts of the Mediterranean.
Ingredients (organic/biodynamic)
- 2 duck eggs
- ¼ c. cherry tomatoes, halved
- ¼ c. cucumber, diced
- ¼ c. bell pepper, diced
- ¼ small red onion, finely chopped
- ¼ c. spinach or kale, chopped
- 1 tsp. lime juice
- 1 Tbsp. of vegetable broth
- Celtic Sea Salt® and freshly ground black pepper, to taste
- Optional: 1 Tbsp. tahini (no added oil or salt) or avocado for added creaminess
Instructions:
- Heat a non-stick pan over medium heat and add just enough vegetable broth to coat the bottom of the pan.
- Lightly scramble the eggs in the pan until cooked through.
- Add the spinach/kale, tomatoes, bell peppers, cucumber, and red onion to the pan. Stir gently until the spinach/kale wilts slightly and the vegetables are warmed through.
- Remove from heat and stir in the lime juice, salt, and pepper to taste.
- For extra creaminess, drizzle with tahini or add slices of avocado, if desired.
