Nut and Seed Date Bars

Nut and Seed Date Bars are a nutritious and delicious snack made with Medjool dates, almond butter, and a mix of nuts and seeds. Dried cherries and blueberries add a touch of sweetness, while Celtic Sea Salt® balances the flavors.

Ingredients (organic/biodynamic):

  • 1 c. Medjool dates, pitted
  • 1 Tbsp. unsweetened almond butter
  • 1 Tbsp. warm water
  • 1 Tbsp. sesame seeds
  • 2 Tbsp. cashews (chopped)
  • 2 Tbsp. raw almonds (chopped)
  • 2 Tbsp. pumpkin seeds
  • 2 Tbsp. sunflower seeds
  • 2 Tbsp. dried cherries
  • 2 Tbsp. dried blueberries
  • 1/8 tsp. Celtic Sea Salt

Instructions:

  1. In a blender or food processor, blend Medjool dates, almond butter, and warm water together until well combined into a puree. Set aside.
  2. In a large skillet lightly toast all the seeds and nuts over medium heat.
  3. Remove the pan from the heat and stir in the date puree, dried cherries, and dried blueberries. Mix until all the nuts and seeds are well coated.
  4. Invert the mixture into a parchment lined square pan. Press it firmly with the back of a spatula until you have a square shape. Sprinkle with Celtic Sea Salt.
  5. Place the pan into the refrigerator for 2 hours to set or 30 minutes in the freezer.
  6. Cut into bars using a sharp knife.
  7. Enjoy!
  8. You can store your leftovers at room temperature for 1-2 days or 7-10 days in an airtight container in the refrigerator.
