Simple Summer Gazpacho Recipe

This refreshing recipe brings together a medley of garden-fresh ingredients to create a simple, yet flavorful dish. Tomatoes, cucumbers, and red bell pepper blend seamlessly with aromatic garlic, onion, and basil, all enhanced by a touch of lime juice and apple cider vinegar. It’s an easy-to-make dish that’s perfect for a light meal or a cooling side, offering a taste of summer in every bite.

Ingredients (organic/biodynamic)

  • 6 c. chopped tomatoes with skin on
  • 2 c. chopped, de-seeded and peeled cucumbers
  • ¾ c. minced red onion
  • ½ c. chopped scallions
  • 3 cloves of garlic (about 1 tbsp)
  • 1 c. chopped red bell pepper
  • ½ c. packed basil
  • 2 Tbsp. apple cider vinegar
  • 1½ Tbsp. fresh lime juice
  • ½ tsp. Celtic Sea Salt® (optional, to taste)

Instructions

  1. Place all items into a blender.
  2. Blend on low speed, and then higher for a few seconds to desired consistency.
  3. Chill or eat right away and serve topped with fresh scallions.
  4. Enjoy!
